I am going to show an incredibly easy Persian Chicken Kotlet Recipe. Persian Chicken Kotlet are delicious meat patties you can serve 100 different ways.
My Persian Mother In Law, Hakimeh, has bestowed some amazing recipes upon me. She is a restaurant owner, mother, and chef so she knows all of the secrets. The amazing thing about any recipe of Hakimeh’s is that she believes in making cooking healthy persian recipes EASY. Her recipes are always the simplist and quickest way to make traditional Persian Recipes, but they always end up tasting the best.
I am excited to share with you the method she taught me to make Kotlet. Kotlet is a common lunch or dinner recipe in Persian house holds and can be made with any ground meat. Feel free to try this exact recipe with ground turkey, ground beef, or even a plant based option like Beyond Ground “Meat”. This recipe is usually served with pita bread, yogurt, a large salad, and/or basmati rice.
Persian Chicken Kotlet makes for a wonderful meal prep recipe because it is packable and can be used so many ways through out the week. You can even make a large batch to freeze and always have these to reach for on busy evenings.

How To Perfect Persian Chicken Kotlet
-It is very important to not skip the step of straining the liquid out of your processed onions and garlic. If you leave all of the water in the onion and garlic mixture your patties will fall apart and wont hold their shape! I have tried to skip this step before and can promise you this is 100% necessary.
-Dont be afraid to adds tons of herbs and spices. These are meant flavorful, the herbs are what gives this dish its true Persian flavor!
How Veganize Persian Kotlet:
Interested in making this recipe without animal products? All you will need to do is sub ground chicken for 1 package of Beyond Ground Meat. Then you will need to replace the egg with a flax egg.
To make a flax egg simply mix one tablespoon ground flaxseed meal with three tablespoons of water. Mix together, and let sit in your fridge for 15 minutes to set up and thicken. Its really that simple!
Persian Chicken Kotlet (Kotlet Morgh) or Persian Meat Patties
Equipment
- Food Processor
- Frying Pan
Ingredients
- 1 Package Ground Chicken
- 1 Egg
- 1/4 White Onion
- 4 Cloves Garlic
- 1/2 Cup Fresh Cilantro Stems removed and lightly chopped.
- 1 TSP Salt Or To Taste.
- 1/2 TSP Turmeric Powder Or To taste.
- 1 TSP Dried Mint Or To taste.
- 1 TSP Paprika Or To taste.
- 1 TSP Pepper Or To taste.
- 1/2 TSP Ground Coriander Or To taste.
- 1 TSP Garlic Powder Or To taste.
- Crushed Red Pepper Flakes Or To Taste (optional).
- 1 1/2 TBSP Olive Oil
- 1/2 Lemon The juice of half a lemon.
Instructions
- In a food processor combine the onion and garlic cloves. Process until smooth.
- Remove this onion and garlic mixture from the food processor. Using a strainer or cheese cloth, press out as much liquid from this mixture as possible. Discard the liquid and add the processed onion and garlic to your large mixing bowl.
- In a large mixing bowl combine all of the remaining ingredients.
- Combine this mixture well and then begin to form patties.
- In a large frying pan bring 1 TBSP olive oil to medium-high heat.
- Cook the patties for approx. 5-6 minutes on each side (or until chicken is fully cooked and the outside is golden brown).
- Serve & Enjoy!
