These vegan chocolate chia seed pudding and yogurt parfaits are the easiest and most beautiful make-ahead breakfast out there!
A breakfast with only 6 ingredients, that takes 10 minutes to make, is meal prep friendly, nutrient-dense, vegan, gluten free, and so pretty you will want it on your IG. What more could you ask for?
I came up with this recipe when I was trying to fix my sleep schedule and start waking up earlier in the mornings. I wanted something to wake up and look forward to. It needed to be something light, but nutrient-dense enough to keep me full throughout the morning. So I decided to layer up a few of my vegan breakfast favorites into this delicious chocolate chia seed parfait.
Cocoa Powder:
Incredibly Antioxidant-rich. High in polyphenols, a particular antioxidant responsible for many health benefits including increased blood flow and decreased inflammation.
Mood-boosting properties from cocoa’s flavonol content, the pleasure of eating chocolate, and the gentle caffeine boost. (1)
Chia Seeds:
Chia Seeds live up to the title “superfood” because of their rich nutrient density!
For such a small serving size they are incredibly high in the following: Fiber, Protein, Omega-3s, calcium (18% RDI), manganese (30% RDI), magnesium (30% RDI), and phosphorus.
They make an incredible addition to any diet, especially for plant-based ones.

- How long do chia pudding yogurt parfaits last in the fridge? These last for around 3 days which is why this recipe creates 3 servings!
- What modifications can be made? Please feel free to modify these chia seed pudding parfaits to your liking! A few different modifications could be switching out the berries to your favorite fruit, using vanilla protein powder instead of cacao powder in the chia pudding, and using your favorite flavor of yogurt.

Vegan Chocolate Chia Seed Pudding And Yogurt Parfaits
Ingredients
- 1 1/2 cup unsweetened nut milk
- 1/2 cup chia seeds
- 2 tbsp cocao powder
- 1/2 tsp vanilla extract
- 1 tbsp maple syrup Optional, for sweetness and can sub honey or monk fruit.
- 1 1/2 cup plant based yogurt of choice I recomend vanilla flavor
- 1 1/2 cup frozen mixed berries Feel free to use fresh berries of your choice.
- 1/2 cup granola Optional topping
Instructions
- In a blender, combine nut milk, chia seeds, cocao powder, vanilla extract, and maple syrup. Blend until smooth to make the chocolate chia seed pudding.
- Assemble 3 mason jars. Fill each with 1/3 of the chocolate chia seed pudding.
- Over top of the chia seed pudding, add a layer of frozen berries.
- Over the top of the berries, add a layer of plant based yogurt.
- Top with one more layer of frozen berries and garnish with granola (optional).
- Close the lid of each mason jar. Refridgerate over night and enjoy for the next three days!
