Have you ever wondered if you can cook quinoa and lentils together in your rice cooker? Or what about if you can make an entire meal using only a rice cooker? The answer to both questions is YES! This 100% vegan / plant-based rice cooker recipe does both. This is a Quinoa, Lentil, and Veggie Grain bowl that is perfect for your busiest evenings. The recipe is so easy to follow you will simply add everything to your rice cooker and come back in 20 minutes to a complete meal.
This recipe is vegan rice cooker recipe is 100% customizable. Feel free to use your favorite broth, color of quinoa, lentil, and vegetable combination.
Quinoa:
For a grain, quinoa is very protein-rich containing 8 grams per cup. Quinoa is a good source (10% or more RDI) of the following: protein, fiber, copper, iron, vitamin B6, and thiamin. (1)
I highly recommend buying organic quinoa and lentils in bulk so that you save money and always have them stocked in your pantry. This is such a great wellness life hack!
Lentils:
Rich in both solvable and insoluble fiber, which contributes to the feeling of fullness and can help with IBS.
As a result of lentil’s fiber, folate, and magnesium content they are a very heart-healthy food. They restore your body’s iron supply leading to healthy sustainable energy. Lastly, lentils are rich in protein providing 18 grams per cup. (2)
Ingredients:
You will need a rice cooker with a steaming tray for this recipe.
-1 1/2 Cups Broccoli
-1 Medium Sweet Potato
-One Cup of White Quinoa
-3/4 Cup Red Lentils
-3 1/4 Cup of Low Sodium Vegetable Broth. (I recommend Pacific Foods, which has incredible ingredients!)
-Salt, Pepper, Garlic Powder, Cayenne, & Lemon Juice.
-Optional Avocado for Serving
This Quinoa, Lentil, and Veggie Grain Bowl is packed full of nutrient-dense ingredients. We have the lentils which are a shocking 18 grams of protein per 1/2 cup. The quinoa is another 4+ grams of protein per serving. The broccoli has cancer-fighting properties, iron, and so many more health benefits. The sweet potatoes are more healthy carbohydrates with beta carotenes and vitamin C. This is a “lazy meal” that you can feel so good about.
Recipe:
1.) Chop one small head of broccoli into medium-sized pieces. Chop one medium sweet potato into about 1/2-inch cubes. Move the chopped vegetables to the steaming tray that fits into your rice cooker.
2.) Add 3/4 cup red lentils to the pot of your rice cooker and rinse well.
3.) Add 1 Cup of White Quinoa to the pot of the rice cooker and then cover the quinoa and lentils with 3 1/4 cups of vegetable broth. Give a quick stir. Place the steaming tray over top, close the lid, then turn your rice cooker ON, and let cook.
4.) I personally like to remove the vegetables a few minutes before the rice cooker pops, because I do not like them to be overcooked and “mushy”. When your rice cooker pops you know that quinoa and lentils are perfectly cooked. Then, add your vegetables over top.
5.) Season with light salt (because we used vegetable broth). Finish seasoning with black pepper, garlic powder, cayenne, dried mint, and lemon juice all to taste.
6.) Optional, top with avocado and your favorite hot sauce. Then, enjoy!
