Vegan Chocolate Chia Seed Pudding And Yogurt Parfaits

These chocolate chia seed pudding and yogurt parfaits are the easiest and most beautiful make ahead vegan breakfast out there!

Ingredients
  

  • 1 1/2 cup unsweetened nut milk
  • 1/2 cup chia seeds
  • 2 tbsp cocao powder
  • 1/2 tsp vanilla extract
  • 1 tbsp maple syrup Optional, for sweetness and can sub honey or monk fruit.
  • 1 1/2 cup plant based yogurt of choice I recomend vanilla flavor
  • 1 1/2 cup frozen mixed berries Feel free to use fresh berries of your choice.
  • 1/2 cup granola Optional topping

Instructions
 

  • In a blender, combine nut milk, chia seeds, cocao powder, vanilla extract, and maple syrup. Blend until smooth to make the chocolate chia seed pudding.
  • Assemble 3 mason jars. Fill each with 1/3 of the chocolate chia seed pudding.
  • Over top of the chia seed pudding, add a layer of frozen berries.
  • Over the top of the berries, add a layer of plant based yogurt.
  • Top with one more layer of frozen berries and garnish with granola (optional).
  • Close the lid of each mason jar. Refridgerate over night and enjoy for the next three days!
