Mediterranean Quinoa Salad With Feta Cheese
This Mediterranean Quinoa Salad With Feta Cheese is one of my favorite dishes to make for lunch meal preps, as a side dish, or to bring on a picnic. It is flavorful, packed with protein, and packs well in to-go containers. The best part is that it is extremely easy to throw together.

- 1 1/2 Cup White Quinoa
- 1 Can Garbanzo Beans Drained and rinsed
- 1/2 Cup Kalamata Olives
- 6 OZ Feta Cheese Crumbled into small pieces
- 1 Cup Parsley Stemmed and lightly chopped
- 3/4 Cup Cherry Tomatos Washed & halved
- 1/4 Large White Onion Diced
- 3 TBSP Extra Virgin Olive Oil
- 1 1/2 Juice of fresh lemon
- 1/2 TBSP Salt
- 1/4 TBSP Black Pepper
- 1 1/2 TBSP Dried Mint Crushed in your hands before adding into the salad
Cook the quinoa as the instructions on package state. I personally combine 1 1/2 cups of quinoa with 3 cups of water and cook this in my rice cooker.
While the quinoa cooks wash & chop all of the listed produce above (parsley, tomatoes, and onion) and drain & rinse the garbanzo beans.
After the quinoa cooks, measure out 3 cups into a large mixing bowl and allow this to cool (to not wilt the parsley).
After the quinoa has cooled combine all of the listed ingredients into the large bowl. Mix well & serve!
